Easy Asian Dinner

One of the best things about the Reclaim Yourself Retreats is the food!  
Creative brains need good food
I served these delicious Turkey Lettuce Wraps for dinner one night.  This is a super easy Asian dinner and tastes so good!
 Asian Turkey wraps are easy and delicious!  Serve with romaine lettuce, white or brown rice, wontons and spring rolls (Costco) for some crunch. 
When that sauce is drizzled over...YUM!
  A simple vegetable platter was served.  Green onions were cut for toppings on the turkey lettuce wraps.
Instead of a heavy dessert, I served a light refreshing drink using lime sherbet, sprite, topped with whip cream and a strawberry.  So good!

Turkey Lettuce Wraps
Yield: 8 servings
Filling
1 pound ground turkey
1 tablespoon soy sauce
1 teaspoon corn starch
1 teaspoon olive oil
1/2 teaspoon sesame oil, optional
Mix all together and set aside to marinate while you prepare other ingredients.

Now Chop the following
2 cloves fresh garlic, grated, (set 1/2 aside for sauce.)
1 inch of peeled ginger, grated, (set 1/2 aside for sauce.)
1 small jalapeño or Serrano chili, minced fine
1 carrot, chopped small
1/2 onion chopped small
1 rib of celery chopped small
1small can water chestnuts, chopped
2 tablespoons hoisin sauce
1 teaspoon siracha or sambal sauce (optional)
1/2 teaspoon sesame oil
1 teaspoon vinegar, or lemon or lime juice
4 Tablespoons soy sauce
Sauce
Mix well: set aside
4 tablespoons soy,
2tablespoons hoisin
1/2 garlic(previously set aside)
1/2 gingerpreviously set aside)
1 teaspoon siracha
1/2 teaspoon sesame oil
1 teaspoon vinegar or lemon or lime juice
Preparation
In a skillet, on medium high heat, add 2 tablespoons oil. Stir in ground Turkey mixture Stir fry until fully cooked, remove from pan, set aside.
Add a little oil to the skillet, add in carrot, onion, celery, and water chestnuts. Stir fry about 5 minutes make a space in the middle of pan and add a little Oil. Stir in remaining 1/2 the garlic, and remaining 1/2 the ginger, and the jalapeño into this oil and stir until you can smell it, about a minute, then stir it through out the vegetable mixture. Add the set aside cooked turkey, and 2 Tablespoons of soy sauce. Stir well, taste, season with more siracha or soy if desired
Serve in lettuce cups with sauce
